About

The heart behind Sensoria House

Our journey began as a neighborhood supper club and has grown into a multidisciplinary studio where food, culture, and design converge.

Founders’ story

Co-founders Lina Moretti and Marc-André Dubois met while staging for a pop-up on the Plateau. Lina’s background in industrial design and Marc-André’s training in fermentation science sparked a curiosity: what if a kitchen could feel like an artist’s studio, with guests participating in the creative process? They opened Sensoria House in 2016 as a home for sensory exploration, buoyed by the boundless hospitality of Montréal’s culinary community.

The duo soon welcomed storyteller and chef Asha Raman, whose work with diaspora communities added layers of memory and ritual to the studio’s programming. Together they steward a space where stories are plated, documented, and shared.

Culinary vision

Seasonal storytelling

Each menu tells a story shaped by the season, the land, and the communities that tend it. Ingredients are treated as collaborators with their own histories and textures.

Multi-sensory learning

Workshops blend taste with touch, sound, and scent. From fabric mood boards to sound baths, every sense informs the plate.

Iterative craft

We think in prototypes. Tasting sessions are documented like studio critiques, giving cooks and guests a shared vocabulary for refinement.

Sustainability practices

  • Producer partnerships: Long-term relationships with small farms in the Laurentians and Montérégie anchor our sourcing.
  • Zero-waste kitchen: Scraps become ferments, stocks, and soil through our rooftop garden compost program.
  • Energy-conscious design: Induction ranges, LED lighting, and reclaimed wood fixtures reduce our footprint.
  • Community accountability: We publish annual ingredient reports and host dialogues on ethical dining.

Creative partnerships

Collaboration is the heartbeat of Sensoria House. We invite creators to co-construct experiences that transcend traditional dining.

Design residencies

Visual artists co-develop tableware, spatial installations, and edible palettes, extending the narrative beyond the plate.

Soundscapes & storytelling

Musicians and writers collaborate on sensory scores and oral histories that guide guests through each course.

Academic collaborations

We partner with local universities on research exploring taste memory, cultural preservation, and inclusive culinary education.

Community initiatives

Work with neighborhood organizations includes youth cooking labs, food justice roundtables, and multilingual recipe zines.
